
Temperature is everything
A mirror glaze is poured at 34°. One degree warmer and it slides off; one cooler and it cracks. There is no second chance: the piece is frozen, the glaze ready, and there is only one moment to coat it whole.
What is inside a mirror
Behind the shine lies a precise formula: sugar, glucose, condensed milk, chocolate and gelatine, emulsified until there is not a single bubble left. That is the secret almost no one sees — a perfect mirror begins by straining and resting the mixture the day before.
The gesture
It is poured in a spiral, from the centre outward, in a single pass. The frozen piece sets the glaze the instant it touches. What is excess falls away; what remains is a thin, even sheet that reflects like glass.
Why it matters
The mirror is not vanity. It is the promise of what is inside: if the surface is flawless, the interior will be too. It is the first thing the guest sees, and the last thing they forget.
